    La flor del guisante de mariposa pertenece a la familia Fabaceae, subfamilia Faboidae. Las hojas, flores y vainjóvenes de la flor de guisante mariposa son comestibles. Las flores florecientes y las hojas jóvenes se pueden utilizar en sopas y fritas. Los brotes jóvenes se pueden utilizar para saltear o hervir y comer. Los extractos de las hojas y flores se utilizan como tinte alimenticio natural.

    A series of in vitro studies on carbohydrate enzymes found that Clitoria inhibits intestinal glucosidase (IC 50 3.15+/-0.19 mg/ml) against intestinal sucrase (IC 50 4.41+/-0.15 mg/ml) and pancreatic α-amylase (IC 50 4.05+/-0.32 mg/ml). The study provided data from five plant foods and assessed intestinal α-glucosidase and pancreatic α-amylase inhibitory activities and their additive and synergistic interactions. It was concluded that butterfly peas could be used to develop functional foods by combining plant foods for the treatment and prevention of diabetes. Preliminary studies also suggest that Clitoria ternatea is beneficial to the liver and may be beneficial to diabetics through its ability to inhibit glucose uptake.

     

    Endocrine Regulation

    Extracts of butterfly pea flower reduce starch digestibility of flour, hydrolysis index, and predict glycaemic index by inhibiting carbohydrate digestive enzymes. Epigallocatechin gallate (EGCG), the main compound in butterfly pea flower, can boost metabolism and accelerate the process of energy expenditure, which can help in weight loss. A study published in the International Journal of Obesity and Related Metabolic Disorders concluded that butterfly pea flower may prevent fatty liver.

     

    Anti-inflammatory

    Anthocyanins have a certain antibacterial effect, researchers have found that anthocyanins extracted from different substances in different concentrations of different bacteria have shown a certain antibacterial effect.     Fever Cooling

    Butterfly pea flower is thought to reduce fever (antipyretic) by dilating blood vessels beneath the skin, thereby increasing blood flow and making it easier to cool. In a study, a methanolic extract of butterfly pea was evaluated for its antipyretic potential against normal body temperature and yeast-induced fever in albino rats. Butterfly pea extract significantly reduced normal body temperature and yeast-induced elevated temperature in a dose-dependent manner at doses of 200, 300, and 400 mg/kg. The study showed that the antipyretic effect of the extract was comparable to that of acetaminophen (150 mg/kg body weight), which is a standard drug used for fever.

    Butterfly pea flower powder has a wide range of applications in the food and beverage field, it is suitable for food coloring and can be used to make blue noodles, rice, bread, pastries, and other desserts.
